Pressure Canning Dried Peas

Ingredients

  • 5 Lbs Whole Peas
  • Salt if desired

Equipment

  • 1 Pressure Canner
  • 2 Cases Pint Jars
  • Basic Canning Supplies

Method

  1. Rinse peas and disguard any rocks, bugs, etc that may be in the bag. I've never had this problem so to be fair, I don't usually rinse.
  2. Scoop 1 cup of peas into a quart jar or 1/2 cup into a pint jar
  3. Fill the rest of the way with water, making sure to leave 1" headspace
  4. Optional! Add 1 teaspoon for quart or 1/2 teaspoon for pint
  5. Fill your pressure canner with water to manufacture recommended level
  6. Add jars to canner
  7. Process for 90 minutes for quarts or 75 minutes for pints
  8. Allow canner to completely depressurize before opening
  9. Once depressurized, pull out jars and place on a towel until you hear the beautiful *ping*
  10. If any jars fail to seal, refrigerate and use within 4 days.
  11. Be sure to label your jars!
